When you eat protein and fat (like steak): • They don’t spike blood glucose directly. They digest slowly and have little to no immediate effect on blood sugar. • They trigger glucagon and insulin balance. Protein stimulates both hormones — glucagon raises blood sugar slightly, but insulin helps cells absorb glucose efficiently, stabilizing levels. • Fat slows digestion. It delays carbohydrate absorption from earlier meals, preventing rapid spikes or crashes. • It can shift your body toward fat metabolism (ketosis). If you’re already low-carb or insulin-sensitive, eating mostly protein and fat encourages your body to burn stored fat and stabilize glucose. In short, when you replace carbs with steak or other high-fat/protein foods, your blood sugar often drops or normalizes because there’s less glucose entering the bloodstream and your insulin response becomes smoother. If you’re seeing consistent results like this, it’s a good sign your insulin sensitivity has improved and your body is using energy more efficiently — likely a combination of your diet, fasting, and exercise routine.
