I came home last night and felt like crap (turns out I have Covid! After avoiding it this whole time. ) So I ate a very small plate and went to bed. I woke still feeling bad but was hungry. Since I never eat breakfast anymore I took the breakfast opportunity to try French toast with some of the Protein Sparing bread I made Monday. This came out so good!! The bread worked perfectly for it. Great texture and flavor. The rest of the loaf is in the freezer, wrapped in 2 slice packages so I can defrost one package for a sandwich/toast/etc. I'll definitely keep making the bread and always keep it on hand.
