New recipe: Rollatini Found it on a Keto page and tweaked it. 3 medium zucchini & 3 medium squash 1 15 oz container of ricotta 2 cup grated mozzarella 1 tsp Italian seasoning Salt & Pepper to taste 1 large egg beaten 1 jar low carb marinara (I like Rao’s) 2 lbs ground meat 2 onions chopped Using my mandolin, on the the 2nd setting I sliced the zucchini and squash. Then in a large boiling pot of water, toss in the zucchini and squash. Cook for about 3 minutes, then lay flat on paper towels, let dry. Brown the ground meat with the onions. Drain the meat and add marinara sauce until heated. Meanwhile, in a bowl mix ricotta, seasoning, s&p, 1/4 cup mozzarella, and the beaten egg. Next, place 1 heaping tsp of ricotta mixture on the zucchini & squash strips and roll up. When all are rolled up prepare your oven safe pan. Cover the bottom of the pan with the meat sauce. Then place your rolled zucchini & squash lined up over the sauce. Top with the rest of the mozzarella. Bake at 375 until cheese is melted and turning brown.
