A week ago I posted a picture of a yummy spiced Mexican coffee that I had gotten at a local coffee shop. I had to modify it quite a bit because it’s typically a highly sweetened drink with added sweetened foam on top. After a conversation with the owner we gave it a try at home! We tested a couple of batches with tweaks and I think we came up with something pretty simple & delicious. We prefer it iced so we make a pitcher & keep it in the fridge for several days. Here’s our Low Carb/Keto version of Cafe de Olla that isn’t sweetened and can be made in your regular coffee maker! **We use decaf coffee for ours but fully leaded works too. *In with your typical amount of coffee grounds we bury a couple of broken up cinnamon sticks, a few whole cloves (5 or 6) and a star anise. *We also put 2 whole cinnamon sticks in the coffee pot itself. We prefer a cinnamon-forward flavor so you could adjust if you don’t. *Brew the full pot of coffee (ours is a 14 cup) and let it sit and steep until it’s cool enough to transfer to your pitcher. Take the whole cinnamon sticks out when you transfer it to the pitcher. *It’s delish black, with a splash of hwc, with your preferred sweetener, added cinnamon sprinkled on top or whatever! Be creative & make it your own! You can also save, dry out & reuse the cinnamon sticks a time or two. Enjoy! 😎☕️🤎
