The meal prep saga continues…Part 2. Our crazy hot weather is calming down so today was “reassess & replan” day. I repackaged & froze the rest of the shredded chicken for future meals. Half of the leftover taco-y seasoned ground beef became a taco cauli-rice skillet & the other half went into the freezer for another time. Pretty much everything else is either gone or being worked on. Here are some pics of the skillet. Family favorite, easy peasy & delish! Here’s what I did: *Dumped 2 pkgs of frozen cauli-rice into a skillet on as high of a temp that your skillet can take. Sauté it until ALL the excess liquid is gone (yes, all of it! You’ll add a little more liquid later.) *Added in some more taco seasoning & the taco-y seasoned ground beef. *Plus add in a couple spoonfuls of salsa (rotel or tomatoes work too.) Heat through. *Later when we dig in there will be sour cream, cheese & green onions to add on top. 😋 Tasty…
