Hi, I adjusted my work schedule last week and I've been so happy all day. It's the first time in three years that I actually have the weekends off. I have off half of a day on Friday all day, Saturday and Sunday. Today on my first Saturday off in three years, I was able to do some batch cooking. I made pork with oyster mushrooms, onions, and cream sauce and hearts of palm . Then I made creamy lemon chicken with spaghetti squash. Tomorrow I'm going to make a low-carb chicken crust pizza with deluxe toppings. I batch cooked all the toppings today too. Here's to being ready for next week with some food that's readily available to snatch and grab when I'm busy!
