I finally had the time to make some “fauxtato” salad today. I had the idea of mixing the cauliflower version with the rutabaga version, and it turned out great! I took two large rutabagas, chopped and one large head of fresh cauliflower, chopped and diced them. I boiled them both separately, then added 1 cup of mayonnaise, 1T of brn mustard, 1 cup of diced celery, 1/2 cup of no sugar added sweet relish, 1/2 cup of chopped white onion, two green onions, garlic powder, sweet Hungarian paprika, and salt and pepper to taste.
