Not my recipe - a good one nevertheless 😉 🍳🧀 Cottage Cheese Egg Bites – Creamy, Protein-Packed & Low-Carb! 💪 Fluffy, savory bites perfect for breakfast or snacking! Ingredients (makes 6): 4 large eggs ½ cup cottage cheese (full-fat) ¼ cup shredded cheddar or mozzarella ¼ cup chopped spinach or bell pepper (optional) Salt & pepper to taste Instructions: Step 1: Blend & Season Preheat oven to 350°F (175°C). Grease a muffin tin. Blend eggs and cottage cheese until smooth. Stir in cheese, veggies (if using), salt, and pepper. Step 2: Bake the Bites Pour mixture evenly into muffin cups. Bake 18–20 mins or until set and slightly golden. 🧁 Soft, cheesy, and only ~1g net carb each!
