Post Mother’s Day first meal-of-the-day using up leftovers! ! I know it 👀 like potato salad but it’s not. It’s Faux-potato salad with a couple extra hb eggs on top! I’m adding the recipe that @Tia Reid posted a couple of weeks ago just cuz but really this dish is sooo simple to just make like your old favorite from another life. Replace the taters with cauliflower and you’re done! My all-carbs-all-day SIL absolutely loves this and tells me how AH-mazing it is. Below are a couple of tips that I’ve found helpful: 1) I used frozen steam-in-the-bag cauliflower this time & I’ll never do it any other way again. I followed the directions on the back and let it cool for a while IN THE BAG before I opened it. That made it perfectly not-crunchy. You do you but I was never a fan of crunchy potatoes in my potato salad soooo 🤷♀️. 2) Then I put a towel in a bowl, dumped the cauliflower in, wrapped it up to soak up any extra liquid & let it sit for a bit.
