Are you a cabbage fan like me? I *always* have a package of coleslaw mix (and typically a head of cabbage too) in my fridge for quick & easy meals. I’ve read & saved this recipe multiple times but kept thinking…”Really….TWO HOURS in the oven?!?” I finally gave it a try and boy was I NOT disappointed! It was easy, delicious, beautifully tender without being mushy & I didn’t have to babysit it at all (well, maybe a little bit at the very end when I put it under the broiler to brown up.) So good & definitely worth the tiny bit of effort I put in. 😋😋😋 *I used slices of red bell pepper rather than the carrots & I opted for red wine vinegar instead of balsamic.
