Have you heard of Enoki mushrooms? I’ve been INTO them lately. I’ve been using them as noodles because they are CHEAPER than egg white or kelp noodles ($2 for all you see here) when I make ramen or quickly sautéed as a side (here with garlic and soy) and I’ve done a spicy, gochujang version too. They hold their shape and you can twirl them like spaghetti! I can only find at an asian market FYI!
