Had a hankering for some "ice cream." So...I made this today: Keto Blueberry Protein Ice Cream How to make it: Blend 1 cup cottage cheese with ½ cup blueberries (I used a variety of berries) until smooth. Add ½ tsp vanilla and ¼ cup allulose or monk fruit for extra flavor. For a creamier texture, mix in ⅛ tsp xanthan gum and 2-3 tbsp heavy cream. Freeze for 4 hours, stirring halfway through. Enjoy!
