I’m sharing my cheesecake recipe in honor of National Blueberry Cheesecake Day tomorrow. Recipe: RBG’s Cheesecake Recipe Preheat oven to 325F Crust - 1 1/2 cup almond flour, 1/4 cup sweetener, 1 stick butter melted, 1 tsp cinnamon pwdr. Combine & tap into bottom of tray. Optional to pre-bake the crust for 15 minutes. Filling 3-8 oz cream cheese - beat until light & fluffy. Add 1 1/4 cup sweetener & blend well. Beat in 3 eggs individually. Add 1 tsp of vanilla & 1/2 cup sour cream/thick yogurt. Pour filling over crust & bake for 55 min. Let sit in off oven for 10 min before removing. Take a knife and run it inside the rim of pan so that the cheesecake does not stick once springform pan is unlocked. Cool in fridge for a few hours before serving. (Blue) Berry Compote Add 2 cups of berries to a small pot. Add 2 tbsp water and let reduce, on medium-low heat, mixing occasionally. Optional to also add 1 tsp vanilla extract, 1tsp sweetener. Let cool and top on cheesecake when ready to serve.
