Funny story… When my daughter was younger she loved potato salad. One day after visiting my dad we noticed that whenever there was potato salad around she would always put it on toast to eat. Yes, we thought it was curious but you know…kids 🙄! One day we asked her why she was putting it on toast and her answer was that grandpa did it…(I’m pretty sure there was an unspoken “Duh” in there!) Long story short, grandpa was not putting potato salad on his toast he was putting EGG SALAD on his toast! We got lots of laughs from that but she kept that habit even after she was married. Go figure… 🤷♀️ Today I sent her a pic of MY lunch…a chaffle with faux “potato” salad piled up on it! Hehe…part of the fun of having grown up kids is being able to share funny memories with them when they least expect it! ☺️😋 I’ll drop a simple recipe here in case anyone is interested. I just make mine exactly like I would have made potato salad back in the day except I use cauliflower in place of potatoes. Couple of thoughts from me: *I prefer my cauliflower softer & not crunchy much like I wouldn’t have wanted crunchy potatoes in my potato salad when I ate it. *Get the excess water out after you’ve cooked the cauliflower. It will last a few days in the fridge if you do this. * I’ve been told by several “always-carbers” that they would not have known it wasn’t potatoes if I hadn’t told them.
