It’s been over 10 days filled with “staycation” shenanigans, including several Disney visits (the D23 conference was part of that,) some mom-daughter retail therapy ($🫣$,) and even some Rebel ice cream sharing! Good times were had but there were also some moments of reinforcing why the habits I’ve developed over the time I’ve been low carb are helpful & (for me) necessary to remain successful & on-track. Here’s a couple of them: 1. *Some kind of simple meal prep. For me that is having some pre-cooked protein choices that are ready to go so I can throw together a quick meal. I especially like to meal prep different ground meat choices! This last week that meant Taco salad, Garbage stir fry & “Biscuits & Sausage gravy (with eggs of course) were able to make their way to our table in a pretty quick fashion! 2. *Advocating for myself! Meals at the Disney resort have become pretty easy for me to navigate, at least until I ran into a situation where it wasn’t. I could have caved but instead I decided that *this* issue was butted up too close to my line in the sand so I very politely pushed back. The short story is that I was having breakfast at one of the sit down restaurants. Turned out that there was some kind of quality control issue with all the eggs that were delivered resort wide that morning so no eggs were available. My go-to there is a ham steak & eggs w/a side of bacon. Meals, of course, come with potatoes or fruit (I always leave those off the plate.) They were offering to sub an extra serving of potatoes or fruit for the eggs 🤔. I needed them to understand that subbing a starch or a sugar for a protein wasn’t going to work for me. It took 2 servers (not their fault) & finally a second level manager to understand my point & agree “this time” to sub in some bacon for the eggs. Okie dokie! A ham steak & bacon ✅, now what’s so hard about that…! Turned out to be a great morning for me with no regrets! Here’s the garbage stir fry recipe.
