Went to an Italian restaurant over the weekend, really wanted meatballs with melted cheese but surprisingly not on the menu. Made them at home last night. Meatballs 1lb each ground pork and beef 1 egg 1/3 c ricotta cheese 1/4 c parmigiana cheese 2 T fresh chopped parsley 1/2 c chopped onion 2 cloves chopped garlic 2 teaspoons salt 1 teaspoon pepper Dash of red pepper Mix all well. Refrigerate 10 minutes to firm up then divide into 12 portions. Fry in olive oil until browned. Finish cooking by transferring to a baking dish and bake for 30 minutes at 350 degrees. I will usually make homemade no cook sauce with San Marzano tomatoes, put in bottom of baking dish with meatballs before baking. In the last 10 minutes, cover meatballs with sliced provolone cheese. Sauce: 1 28 oz can San Marzano tomatoes 1 clove garlic 2 T fresh parsley 1 teaspoon white balsamic vinegar 2 teaspoons salt Dash of red pepper Add all to blender and blend just until combined. Taste and adjust seasoning. Can be used as is for pizza sauce or in any other dish. No need to cook. YES- San Marzano tomatoes make a difference!
