Rendered down the trimmings from the brisket. Chopped up the cooked/rendered trimmings and salted with Redmond’s fine grind. Strained the fat for the fat jar and the smoking brisket. The result??? Listen, if you miss chips, croutons, etc., … make your own beef chips. Melt in your mouth, yet satisfy the crunch craving. For the love of all things beef … we used the entire brisket and I have a jar full of yummo, salty “chips” and about 4 cups of beef fat … dang proud of myself!! Don’t have trimmings handy? Become besties with your local butcher and kindly ask for some. Render the trimmings on low on the stove for a few hours. Once the bubbles start to subside (you’ll be bubbling away and then pow! … bubbles slow their roll … time to jump into action!), pull the trimmings out. Cool, chop, toss in salt.
