Hubby and I have not been having dinner together for a while now, since he doesn't want to eat as soon as he gets home from work. If I wait for him to be ready, a later dinner interferes with my sleep. It makes me a little sad, BUT, sleep is super important and has been an issue for me. I'm a disorganized and lazy cook. Having frozen fresh foods at the ready helps me to eat a healthy dinner and avoids the “OMG-it’s-4:30-what’s for dinner” panic that I’ve had most of my adult life. A number of times of late I’ve batch-cooked tens of pounds of beef round roast (filled up the Instant Pot). I use a food scale and sandwich bags, cut pieces of the meat, weigh them, mark it in ounces and grams on masking tape (helps with Cronometer entry when consumed), then line up the bags in a long metal loaf pan. Once they are weighed, I strain the cooking liquid into a measuring cup, then portion the liquid into the bags. I then put the loaf pan in the freezer. Once they are frozen, I put the sandwich-bag sized portions into gallon-sized bags and put them back in the freezer. For dinner, I put three frozen ginger cubes in a Pyrex bowl, a few tablespoons of my previously-mentioned frozen green onions, then a frozen portion of beef, microwave for 2.5 minutes, then the beef is broken up and heated another minute or two and consumed. BTW, I found the frozen ginger in the Walmart freezers between the veggies and fruits. The same brand makes frozen garlic, but unlike the ginger, there are unwanted ingredients in the garlic.
