Cheese Sauce SODIUM CITRATE NACHO CHEESE SAUCE After a full lifetime of cooking (i'm an older grandma!), I’ve finally been introduced to sodium citrate! It’s a white substance that looks like salt. Stir 1-2 tsp into 1.75 cups boiling water. Add 4 cups shredded cheese of choice (cheddar, pepper jack, whatever), and stir vigorously. The sodium citrate emulsifies the cheese and water. Viola’ — cheese sauce with REAL ingredients!!! Can also add a can of rotel tomatoes, a cup of salsa, garlic, chili powder, spices, whatever. This is what ALL nacho cheese sauces are made of (minus the other chemicals.) Nacho cheese sauce ALWAYS at hand!!! I can’t believe I never knew this till recently.
