I have a secret step when I make cauliflower or broccoli with cheese. After steaming the veggies and cooling in cold running water to preserve texture, put the cooled veggies into a salad spinner and spin away! I usually get anywhere from a half to a full cup of water. After spinning, I put them in a bowl with butter and seasoning, top with cheese, then microwave for about 1 minute to melt the cheese. The result is delicious veggies with cheese and no water in the bowl to ruin the cheese. I eat a lot more veggies because of this one step. Who else dislikes runny, watery cheese?
