I decided to add some veggies to my 1st meal of the day. I found this interesting recipe for cabbage egg nests. It calls for carrots and 1 tablespoon of white flour in the egg mixture so I subbed in broccoli and used 2 teaspoons of white flour (4 carbs). It also calls for ham, but I opted for sausage in its place. You just whisk all the ingredients together and put the nests it in a frying pan and make a hole in the middle to put each egg in it. I made a few individual nuts and then decided to just make a whole pan of it to make it easier! It made 9 portions so it was less than 0.5 carbs from the white flour for each egg nest! I gave my son and daughter-in-law this for breakfast and they loved it!
