So glad you are here!! Don’t be shy! Say hi! Meal prep done for next week. Weekend Warrior in full beast mode this morning and definitely counted it as a workout. About 90 minutes and set up for the week. One mess and done! Woot woot!! - 14 egg deviled egg salad. Instead of making deviled eggs, I smooshed the eggs through the holes of a cooling rack and made it into salad … who wants to cut up 14 rolly polly HB eggs? Not me. I use celery stalks as my utensil (love that crunch). Recipe in the photos. - 7 quarts of salad jars (added bells, onions, celery, olives, etc.,) … the trick to keeping the jars fresh is not adding high-moisture content veggies like sliced cucumbers. The jars stay fresh all week. - For the salads, I swap the protein (already prepped/cooked and frozen months and weeks ago) to keep things interesting … maybe ground beef “taco” salad one night, pork carnitas salad, grilled chicken salad, shredded turkey salad, leftover steak with vinaigrette, Italian chopped salad with vinaigrette, etc., - For the quick and easy vinaigrette, I use Chef Alex’s “3-2-1-1” method … 3 parts olive oil, 2 parts vinegar (I like apple cider vinegar or red wine vinegar), 1 part Dijon mustard, 1 part water … shake shake shake! S&P to taste. Done! So yummy and so easy. Update on the rendered and strained beef fat from cooking 20 lbs of ground beef in December … still on the counter, still not rancid, still not moldy.
