This is my go to dish when I don’t have time to cook. I throw one bag of cauliflower rice (yields 2 cups) in the microwave for 4 minutes -then I add 1/4 of a cup of frozen peas and carrots, a few tablespoons of frozen white onion and microwave that for another two min. When it’s done I mix in 2T of mayonnaise, 1T of lemon juice, and add garlic powder, salt, and pepper to taste. While the cauliflower rice is in the microwave I quick sauté 6oz of frozen shrimp in 1T of olive oil & 1T of butter with some garlic and parsley and top off the cauliflower rice. This whole process takes about eight minutes. This has been a real lifesaver when I am stressed out and don’t have a lot of time to cook.
