I just wanted to post another little tidbit about substituting low carb foods for their high-carb counterparts. I LOVE pasta salad, so I made this Not-Pasta-Salad substitute. The recipe is posted in the second picture. I just substituted 4 cups of thinly sliced zucchini round halves for the pasta and made the homemade dressing. I added chunks of salami and ham, cheddar cheese, and Colby Jack cheese chunks and some Parmesan cheese to finish it off. **NOTE-I cut back on the olive oil & used 1/2 cup because the zucchini doesn’t absorb it quite as well as pasta noodles.
