Deconstructed/bread free Bahn Mi. My husband braised beef cheeks in Asian spices and we used that to build Bahn mi (Vietnamese poboys). The rest of the family had the bread (since I'm the only one doing low carb in this house.) I have to say this is the first time, I think, that I've looked at their plates longingly. I put mine on top of mini peppers. It was good but I missed the "chew" of a crusty baguette. Someone posted a homemade keto (maybe protein sparing? ) baguette that looked like a good crunchy crust baguette. I can remember who it was (maybe Brian or Bob?) And now I can't find it (does anyone know?) Next time I want to try that. I just didn't have time to make bread tonight when I got home from work. My plate is peppers, braised beef cheeks, green onions, a small handful of mung bean sprouts, pickled daikon (everyone else had daikon and carrots but he pickled that jar with sugar so I made him make more without the sugar for me...and the sugar was not missed or needed!) And drizzled with a mix of mayo and Sriracha with a bit of the juice from braising mixed in. It was good really!!! And I'm full and satisfied but next time I do want to try making a bread option that I can have. (Trigger warning ... the second photo is the sandwich with bread... im hoping to find a decent homemade safe option that would give me more texture like that)
