Today I made a meatloaf. It was carnivore-adjacent. My husband told me that it was the best meatloaf he's ever had. Here is approximately what I used: - 2 lb ground beef (standard Costco bulk stuff) - ~1 c crushed plain pork rinds* - 3 eggs - 1 small onion, minced - ~ ⅔ c shredded parmesan/asiago blend - ~ ½ c no-sugar ketchup - ~ 2 tsp dried parsley - black pepper - bacon Mix the first 8 ingredients well. Put in large loaf pan. Cut bacon however needed to make it convenient to cover the top of the meat. Bake at 350ºF until internal temp just above 160º in the middle. * The Wegmans pork rinds are SO SALTY that I didn't need to add any further salt. If your pork rinds are more... sane... you might add some salt.
