Had 1/2 of a leftover rotisserie chicken so I made chili. Shredded the chicken added 1 1/2 pablano pepper and 1/2 onion.chopped in 1 tbsp of olive oil, let cook over medium high heat for about 5 minutes. Added 1cup of chicken stock if you like your chili soupy add more. Then 1 heaping tsp of chili powder, 1 heaping tsp cumin, salt and pepper to taste, add some cilantro and juice if 1/2 lime. I add some shredded Colby cheddar and sour cream and fresh sliced jalapeños. Serve over cauliflower rice
