Thinking the crunchy pepperoni “oven chips” would add a nice salty crunch, too!! Who needs croutons when you have crunchy pepperoni chips!?! The salad was missing pepperoncinis, but added them to the grocery list for next week. Also, I did not have red wine vinegar, so I used apple cider vinegar and it was fine. (Added red wine vinegar to the grocery list lol). For quick meals and fast lunch box prep, I cut up the salami, pepperoni, and green olives for the week so I don’t have to deal with it later (salad jars for the week already done).
