We have some bad weather coming through our area tonight. May have gone a little overboard cooking to stay busy. πŸ€·πŸ»β€β™€οΈ Meals prepped for a while. Will chill in the fridge overnight and make individual servings and freeze for a quick lunch or dinner. My version of Lena’s Cabbage Casserole β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€”β€” 4 1/2 lbs ground beef 2 yellow onions chopped Garlic Powder Onion Powder Salt & Pepper to taste Italian Seasoning Brown the ground meat with the onion and drain. 2 jars Rao’s Marinara Sauce 1 1/2 heads of cabbage shredded 2 cans petite diced tomatoes Heat up the sauce and throw in the shredded cabbage and tomatoes. Cook the cabbage down until it’s almost done. Add in the browned ground meat and mix well. I cooked it down a little bit more until it thickened up a little bit. Cottage cheese Italian Cheese/Mozzarella In casserole dish put a layer of the cabbage mixture, a layer or cottage cheese, a layer of cheese. Repeat as needed for depth of pan. Bake at 350 until cheese is bubbly. Let rest a few minutes before serving. So good!
