A friend recently suggested cabbage leaves in place of tortillas for enchiladas. Genius! Enchilada cabbage rolls. Except I now remember why in my 30 years of cooking I only made cabbage rolls twice! I swear I was ready to throw the head of cabbage thru the window as I fought to get intact leaves off of the head if cabbage to boil. It is a mess. My kitchen is a mess. Few of the rolls will hold together and they JUST went in the oven (almost 9 pm) and my feet hurt 😆. Pics are before baking. These better be good. (Making homemade sauce was super easy though...all of the packaged sauces were filled with bad things and I'm really happy how both sauces came out. Chicken with green chili sauce and the beef is with the red sauce.
